Huaiyang cuisine is one of the Four Great Traditions of Chinese cooking, along with Cantonese cuisine, Shandong cuisine and Sichuan cuisine. Different from the others, Huaiyang cuisine is named after two cities along the Grand Canal. Huai refers to Huai’an, and Yang refers to Yangzhou. Both cities are awarded as the Hometown of Huaiyang Cuisine by the National Council.
